Ingredients
- β’72g
- β’1g Black pepper
- β’1g Salt
- β’48g Avo (6 x 8g slices)
- β’60g sushi veg (shredded)
- β’5ml Garlic oil (1 tsp)
- β’30ml Ponzu sauce (2Tbsp)
- β’2g Sesame seeds
Garnish
- β’Ginger
- β’Wasabi

Method
- 1Cut 6 incisions into the fillet
- 2Pour on the garlic oil and then use the torched gun to seared it
- 3Season the with salt and black pepper.
- 4Place the shredded sushi veg on a medium sushi plate.
- 5Place the slices of and avo on top of the sushi veg alternating them as you place them.
- 6Sprinkle the Sesame seeds over the top.
- 7Serve with ginger and wasabi and the Ponzu sauce on the side in a small sauce bowl.
