The sushi bar is broken up into two workspaces. 1 The co-ordinator’s station The co-ordinator is responsible for the following: Reading of orders. Making of Nigiri, Gunkuns and Sashimi. Plating of all sushi. Keeping his/her area clean. Communicating with the maki rollers and checking up on the progress of the other sushi chefs. Ringing the bell for collection. Method

  1. 1Make the .

  4. 4Make the prawn nigiri last.
  5. 5Lay a chopstick in the center of a large coloured plate to keep a straight line.
  6. 6Place the maki to the right of the chopstick on the bottom half of the plate.
  7. 7Place the nigiri to the left of the chopstick at the top half of the plate.
  8. 8Place the roll on the right of the chopstick at the top of the plate.
  9. 9Place the California roll on the left of the chopstick at the bottom of the plate, 2 pcs upright and 2 on their sides, as per the image.
  10. 10Place the wasabi and ginger on the top right of the plate.
  11. 11Remove the chopsticks.
