🥣 Ponzu Sauce (Halaal)

Halaal ponzu for restaurants that cannot use the standard recipe. Kikkoman soy only. Keeps 2 weeks.

Ingredients

  • •1l Soy sauce
  • •300g Sweet chilli sauce
  • •250g White sugar
  • •250ml Lemon juice (not concentrate)
  • •30g Cajun spice
  • •40g Fine table salt

Equipment

  • •Big basin
  • Sealable container
  • Large spoon
  • Squeezy bottle

Method

  1. 1Add all ingredients to a mixing bowl.
  2. 2Stir until everything is combined and the sugar has dissolved.
  3. 3Decant into a sealable container, label and date, and store in the fridge.
  4. 4Decant into a squeezy bottle for daily use.

Notes

  • •Ponzu sauce can be kept for 2 weeks.
  • •Must be dated and stored in a sealable container
